fooooood

The weekends go by too quickly. We spent ours mostly at home, and cooking was the main focus. Making good food is a sure-fire way to make your husband happy, and since Valentine's Day is coming up and Nate wouldn't be around, we decided to celebrate early. Last night, we made toasted pita sandwiches of turkey, cucumber, roasted red pepper, hummus, provolone, and za'atar dressing. For dessert, I made chocolate lava cakes with Lori's homemade vanilla ice cream, whipped cream, strawberries, and chocolate syrup. Ah! Delicious. But today, oh boy... Sandra had been craving the Pollo Don Quijote dish from Pepin (we had taken them when in Arizona), so Lori bought the ingredients and had me try to recreate it. Lori made some crusty bread and a Spanish-style salad to go along with it. Let's just say that everyone had seconds.

And for dessert? I had a recipe for "The World's Best Carrot Cake" that I had never tried, so again, Lori provided ingredients, and I assembled it. I wish I jotted down where I got the recipe, because they need to be commended. It really was the best carrot cake any of us had ever had - pineapple, raisins, and walnuts were added to the cake, and orange zest was added to the cream cheese frosting. Perfection.

I'm not losing my pregnancy weight any time soon.
